It's at this time of year when the harvesting of fruit is at it's peak, that we get to implement some of our favorite fruit recipes. Recipes that refresh and bring back memories from the previous summers.
Fruit Pizza is one of these recipes. Found, we believe, in a Perennials magazine quite a few years ago, this is one our favorite ways to use up extra fruit that we may have. It's the perfect ending to a hot day and oh so refreshing with all of the fruit on it. Oh my mouth is watering for it as I type!!!

Crust:
1/4 cup butter or margarine, softened
1/2 cup sugar
1 egg
1/4 tsp. vanilla extract
1/4 tsp. lemon extract
1-1/4 cups all-purpose flour
1/4 tsp baking powder
1/4 tsp. baking soda
1/4 tsp. salt
In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking power, baking soda, and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into a greased 12-in. or 14-in. pizza pan. Bake at 350 degrees for 12-14 minutes or until a light golden brown. Cool completely.

4 ounces cream cheese, softened
1/4 cup confectioners' sugar
1 cup whipped topping
In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Add whipped topping; mix well. Spread over crust. Add your choice of fruits; our favorites are strawberries, kiwi, blueberries, peaches, bananas', or anything else that we may have handy.
Glaze:
1/4 orange juice
1/4 cup lemon juice
1/4 cup hot water
2 tsp. cornstarch
1/4 cup sugar
Combine glaze ingredients in a saucepan; bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in the refrigerator.
Yield: 12-14 servings

Wow, that looks good. I was just wondering what to make for my little boy's 2nd birthday this weekend, as we don't like cake a whole lot...maybe I'll have to make one of these.
Sarah- It is refreshing... a good way to use up peaches and blueberries that one might have floating around their house (like we have at the moment... well, not the peaches but I have a feeling that we will very very soon!).

Becky- I don't think you would be dissapointed with this recipe, Becky. It's quite good and the 'crust' is almost like shortbread... it's very similar. If you do try it, I hope you find it very good!

I have had fruit pizza before and liked it, but had only seen recipes using the "tube" sugar cookie dough you buy at the store. I like the idea of making my own crust better.
Welcome to my blog, Beth! You may find it interesting that we have two recipes for fruit pizza; one calls for a tube of dough and the other has you make it. We took the dough from the one and used the topping 'concoction' from the other to create this one, which we love!!
I agree; I really like the idea of making my own crust instead of buying it. It seems healthier and more tasty as well!
